Courgette Fritters – Nigella Lawson

img_0741Creamy salty feta, crunchy texture from the spring onions and fresh herbs makes for a winning fritter.

Late May is not usually a time for courgettes, but I struck gold at the Parnell Market last weekend. I followed Nigella’s  simple recipe with minor adjustments (no  fresh or dried mint and halved the amount of courgettes) and it was a success.

She suggests dressing them with fresh lime juice but I used some hummus and garlic sauce purchased from KohKoz at the Clevedon Farmers Market and a little rocket.
